OLIVE OIL PRESS (FABRIKA) AT GAVALOCHORI, CHANIA

Olive oil press with four millstones where the crushing of the olives and their conversion into olive pulp takes place. Above the olive press is a wooden scaffolding on which a large straw basket is placed. The olives start out in this basket.

 

Olive press for the extraction of olive oil. The olive oil along with the olive juice is gathered in a stone basin. Then, being lighter, the olive oil rises to the top layer where it is collected.

The movement of the press is achieved through a system of two wooden beams which are connected to the olive press with a rope. The vertical beam (mpotzergatis) is rotated with the help of a smaller horizontal beam (pasouli).
