OLIVE OIL PRESS (FABRIKA) AT PISKOPIANO, HERAKLION

Olive oil press with one millstone where the olives are crushed and then converted into olive pulp.
Olive press for the extraction of olive oil. The olive oil along with the olive juice is initially gathered into the larger section of the wooden receptacle. Then, being lighter, the olive oil rises to the top layer and ends up in the smaller section of the wooden receptacle from which it is collected.

The movement of the press is achieved through a system of two wooden beams which are connected to the olive press with a rope. The vertical beam is rotated with the help of a smaller perpendicular beam.
